Two Easy Recipes: Cheesy Chicken Skillet Dinners

Jen’s Easy Cheesy Chicken Skillet

The Basic Ingredients:

  • 1 – 1.5 lbs boneless skinless chicken (about 4 breasts)
  • 1 can Cream of Chicken Soup (or Cream of Mushroom Soup)
  • 4 – 8 oz Velveeta Cheese, shredded or cubed
  • 8 – 16 oz frozen chopped broccoli, cooked
  • 1/4 c milk
  • 2 cup prepared rice
  • crushed Ritz crackers or bread crumbs, optional

The Directions:

In large skillet, melt a small amount of butter. Add chicken , and cook until the edges of the chicken are slightly golden brown and chicken is cooked through.  Cube, shred, or leave whole….you’re choice.

Drain excess fats from skillet. Add broccoli, cheese, soup, and milk. Stir well. Heat over medium heat until Velveeta is completely melted and mixture is bubbly.  Optional: Top with bread crumbs or crushed Ritz crackers.

Serve over prepared rice.

Let sit for at least 5 minutes before serving.  Resting the dish helps prevent it from being “runny.”

Variations and Tips

  • Want juicier chicken? Try quick boiling! Place chicken in deep pan, add chicken broth to just covering chicken, bring to a boil, pop on a lid, lower temp, and cook about 10 minutes.
  • No topping? No problem.  Tastes great alone…or try Fried onion straws! Yum!
  • For a more traditional take, bake this for 20 minutes or so instead of cooking on stove top.
  • Make your own Broccoli Cheese Potato! Instead of serving over rice, try serving over mashed or baked potatoes.  Tastes like McCalisters or Jason’s Deli!
  • Add a little more milk and make your own Broccoli Cheese Soup!

Cheesy Chicken and Broccoli Pasta

The Basic Ingredients:

  • 1 – 1.5 lbs boneless skinless chicken (about 4 breasts), cubed
  • 1 can Chicken Broth
  • 1 pkg Velveeta Shells and Cheese, or similar product (like So-Cheezy Deluxe Mac and Cheese Dinner)
  • 16 oz frozen chopped broccoli, thawed.

The Directions:

In large skillet, melt a small amount of butter or spray with cooking spray. Add chicken  and cook until no longer pink.

Stir in chicken broth and macaroni. Bring to boil.  Reduce heat to medium/medium-low.  Cover and simmer 5 minutes.

Add broccoli.  Cover and simmer an additional 5 – 7 minutes (until macaroni is tender).

Add cheese sauce and stir until well blended.

Variations and Tips

  • No chicken broth? Water and/or milk work well, too! Just make sure you use about 2 cups of liquid.
  • If broccoli is already cooked, for instance from a steamer bag, add the broccoli when you add the cheese sauce
  • Not a fan of boxed macaroni dinner? No, prob! 2 cups of pasta (elbow, shells, corkscrew, etc) and 8 oz of Velveeta cheese can be used instead of boxed macaroni and cheese dinner.
  • Try topping with bread crumbs!  So good!
