3 Ingredient Mexi-style Side Dish

I love 3 ingredient recipes. They are so easy and usually very inexpensive. If you’re making Dorito Casserole, Enchiladas, Taquitoes, or any another Mexi-style dish, the side dish below is a healthy, quick way to add protein to a meal.

Spicy Corn and Black Beans

  • 1 cup canned Black Beans, rinsed
  • 1 cup canned Sweet Kernel corn, rinsed
  • 1/4  – 1/2 cup salsa

Mix all ingredients in a microwave safe bowl, cover and vent, and cook on high for 2 minutes, or until heated through. Makes 2 servings.
