√Fresh Food Option
Looking for a budget friendly, fresh-food option, one-pot dinner packed with fruit and veggies? Look no further.
I apologize in advance – this dinner tastes wonderful but doesn’t take beautiful photographs.
The Basic Ingredients:
about 1 pound of chicken, diced or shredded chicken
1 bottle of your favorite BBQ sauce (you’ll need a 1 – 2 cups)
1 8 oz can of diced pineapple in juice (or at least 4 oz of pineapple and 4 oz of pineapple juice, more if desired)
Cooked rice (optional)
I used canned chicken for this recipe. However, you can also use fresh diced or shredded chicken (boiled, baked, etc). To shred your cooked chicken quickly, cut it into chunks and use a hand (or stand) mixer.
