Pineapple BBQ Chicken

Looking for a budget friendly, fresh-food option, one-pot dinner packed with fruit and veggies? Look no further.

I apologize in advance – this dinner tastes wonderful but doesn’t take beautiful photographs.

The Basic Ingredients:
about 1 pound of chicken, diced or shredded chicken
1 bottle of your favorite BBQ sauce (you’ll need a 1 – 2 cups)
1 8 oz can of diced pineapple in juice (or at least 4 oz of pineapple and 4 oz of pineapple juice, more if desired)
Cooked rice (optional)

The Directions:

I used canned chicken for this recipe. However, you can also use fresh diced or shredded chicken (boiled, baked, etc). To shred your cooked chicken quickly, cut it into chunks and use a hand (or stand) mixer.

IMG_0059[1]Add your chicken to a medium sized skillet. If using canned chicken, drain it before adding. It will look blocky.
IMG_0060[1]Use a spoon or spatula to make sure your chicken is well shredded.
IMG_0061[1]Add your BBQ sauce. I start with a cup and add more to make it saucy. Stir well and bring to a simmer.

If using fresh pineapple or canned pineapple rings, cut your pineapple into bite sized chunks.
IMG_0068[1]Stir pineapple and pineapple juice into chicken and BBQ sauce. Simmer for at least 5 minutes. It will thicken slightly as it cooks.
IMG_0073[1]Serve over rice. Top with extra BBQ sauce, if desired.
Steamed broccoli is great complementary side. Plus, that makes a meal with a fruit AND a veggie.
