Easy Chicken Tacos

Since hamburger prices have gone up, you may find yourself turning to chicken more often. Step away from baked chicken and do something a little different for dinner!

The Basic Ingredients:

  • 1 Box Taco Kit
  • 1 – 1.5 pound(s) Chicken (we like boneless, skinless tenders)
  • ¼ cup Chopped Green Peppers, optional
  • ¼ cup Chopped Onions, optional
  • Fresh lettuce and chopped tomato, optional
  • Shredded Cheese
  • Sour Cream

NOTE: Our family likes Taco Bell Home Originals  Hard & Soft Kit because it comes with salsa, 6 hard shells, 6 soft shells, taco seasoning, and a packet of Kool-Aid OR Taco Bell Home Originals Cheesy Double Decker (6 hard shells, 6 soft shells, taco seasoning, and nacho cheese)

The Directions:

Step 1:

If not using a non-stick skillet, place a tablespoon of butter or oil in a medium to large skillet. Place skillet on medium-high heat. While pan is heating up, cut chicken into bite-size chunks.

Place chicken equally around heated pan. Cook for 2 minutes. Flip all pieces over. Cook for an additional 2 minutes.

Optional: After the two minutes pass, use a spatula to shred chicken in pan. You may want to shred chicken for small children.

Cook chicken for another 2 minutes.  Stir chicken mixture; check chicken for doneness. If done, move to step 2. If not done, cook in additional 2 minute increments until done.

Step 2:

If cooking for only 2 or 3 people, or if you will be using this chicken in another recipe (like BBQ Pineapple Chicken),  divide chicken into 2 equal portions. Place half of the chicken in a good freezer bag OR a container that seals well. Put that half in the fridge. Leave the other half in the pan.

Add onion and green peppers to pan. I use pre-chopped, frozen bell pepper. Let it thaw while you cook the chicken and just throw into the pan.

Add seasoning packet from Taco Kit and follow directions.

While chicken is simmering, place soft taco shells on the center of a dinner plate. Place hard shells around the edge of the plate; one taco shell will need to sit on top of the soft taco shells. Microwave taco shells for 1 minute.

Step 3:

Serve with salsa, cheese, sour cream, and veggies (lettuce, tomato, etc).

Variations and Tips

Make this Vegetarian! Black Bean tacos! Drain and rinse a can of black beans (and heat to your preference). I love Fiesta Rice and Black Bean tacos. So yummy and SO simple!

Be creative. Tofu tacos, fish tacos, pork tacos, spaghetti tacos. Whatever you like to eat can be served in a taco shell.
