Looking for a budget friendly, one-pot dinner appetizer or a dinner packed with fruit and veggies? Look no further!
The Basic Ingredients:
16 oz of meatballs (about 30)
1 bottle of your favorite BBQ sauce (you’ll need a 1/2 – 1 cup)
1/2 cup crushed pineapple in juice, undrained (I’m using tidbits)
Cooked rice, noodles, or mashed potentates (optional)
MIX Pineapple and BBQ sauce in medium-large pot.
STIR in meatballs until evenly coated.
BRING to boil on medium-high heat; simmer on medium-low heat for at least 10 minutes, but no longer than length of time listed on meatball package. Meatballs should be heated through.
SERVE over rice (or noodles, potatoes, or even a crusty bread). Or serve as a appetizer; arrange on a platter and pop in some toothpicks.
ROUND OUT DINNER. Prepare a bag of steamed veggies.
LEFTOVERS? Serve on hoagie rolls with your favorite sliced cheese (we like cheddar or pepper jack).
TIPS and TRICKS:
- If making this for dinner, consider doubling the BBQ sauce and pineapple, so you have a nice sauce for spooning over rice, noodles, or potatoes.
- Too much BBQ flavor? Add a tablespoon or two of brown sugar to the sauce.
- Love your crockpot? No problem. This can be made in the crockpot, too! Combine the frozen meatballs, pineapple, and BBQ sauce into your slow cooker and stir well until combined. Cook the mixture on low for 6-8 hours or on high for 2 – 2 ½ hours until completely cooked through (stirring occasionally.)
- No love for pineapple? Sub in 1/2 – 1 cup (or a 9 oz jar) of grape or apricot jelly.
